  • Use a mallet or rolling pin to flatten each chicken breast to about ½ inch thickness. This will help the chicken cook evenly and be easier to fill.
  • Cut a pocket into each chicken breast by slicing horizontally, being careful not to cut all the way through.
  • In a mixing bowl, combine the thawed and drained spinach, sun-dried tomatoes, cream cheese, feta cheese, salt, pepper, and paprika. Mix until well combined.
  • Stuff each chicken breast pocket generously with the spinach mixture. Secure the opening with toothpicks if necessary.
  • Rub the outside of each stuffed chicken breast with olive oil, then season with salt, pepper, garlic powder, Italian mixed herbs, and red pepper flakes.
