  • In a large mixing bowl, combine the ground chicken, breadcrumbs (or oat flour), crumbled feta cheese, thawed spinach, diced red onion, dried oregano, dill, minced garlic, salt, and black pepper.
  • Mix everything together until well combined, being careful not to overwork the meat mixture.
  • Divide the mixture into equal portions and shape them into patties, about 1 inch thick. You should yield about 4-6 patties, depending on your desired size.
  • Preheat your grill or cast iron skillet over medium heat. If using a skillet, add a small amount of oil to prevent sticking.
  • Once hot, add the patties to the grill or skillet. Cook for about 4-6 minutes on each side, or until the internal temperature of the burgers reaches 165°F (75°C) and they're golden brown on the outside.
  • Remove the burgers from the heat and let them rest for a couple of minutes.
  • Serve the burgers on whole wheat or brioche buns, topped with tzatziki sauce and your choice of fresh vegetables like cucumbers, red onion, tomatoes, and lettuce.
  • Extra Tips
  • For an extra flavor boost, consider marinating the ground chicken mixture in the fridge for 30 minutes before cooking. This allows the herbs and spices to infuse more deeply into the meat, enhancing the flavorful ingredients. Additionally, if you're making a large batch, cooked patties can be stored in the refrigerator for up to 3 days or frozen for future use. Just reheat them in the oven or on the grill before serving.
