Chicken Veggie Burger Recipe

Ingredients

  • Ingredients
  • - 1 pound chicken breast free-range, skinless
  • - 1 1/2 pounds chicken tenderloins and boneless chicken thighs
  • - 1/4 cup onion finely chopped
  • - 1/2 cup grated zucchini squeezed dry
  • - 1 cup chopped spinach
  • - 2 teaspoons garlic finely chopped
  • - 2 teaspoons Pritikin All-Purpose Seasoning
  • - 1 teaspoon chili seasonings such as ancho pepper
  • - 1 teaspoon Worcestershire sauce
  • - 1/4 cup Panko breadcrumbs
  • - Olive oil for pan frying

Instructions

  • Cooking Instructions
  • Begin by using a food processor to chop the chicken breast until well ground. Transfer to a bowl and set aside.
  • In a skillet, sauté the finely chopped onions over medium heat until they become translucent. If desired, you can also add celery and carrots for extra flavor and nutrition. Chicken veggie burgers are a healthier alternative to classic hamburgers and cheeseburgers.
  • In the food processor, pulse the chicken tenderloins and boneless chicken thighs until finely ground, guaranteeing there's still a bit of texture.
  • In a large mixing bowl, combine the ground chicken, sautéed onions, grated zucchini, chopped spinach, garlic, Pritikin All-Purpose Seasoning, chili seasonings, Worcestershire sauce, and Panko breadcrumbs. Mix everything together until well combined.
  • Form the mixture into patties of your desired size.
  • To cook, choose your preferred method: grill the patties until they reach your desired doneness, bake in the oven at 400 degrees F for 20 to 23 minutes (flipping halfway), or pan fry in a large cast iron skillet with a thin layer of olive oil until browned and cooked through, about 4 to 5 minutes per side.
