Cooking Instructions
Preheat your oven to 375°F or 450°F, depending on your preferred cooking method. While the oven is heating, season the boneless, skinless chicken breasts with minced garlic, dried oregano, Italian seasoning, salt, and black pepper.
In a skillet, heat a tablespoon of olive oil over medium heat. Add the spinach and sauté until it's wilted, which should take about 2-3 minutes. If you like, you can add a little extra minced garlic during this step for added flavor.
In a casserole dish, layer the seasoned chicken breasts at the bottom. Spread the sautéed spinach evenly over the chicken, then dollop cream cheese on top and sprinkle with mozzarella cheese.
Cover the dish with foil and bake in the preheated oven for 30-40 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F. For a golden top, remove the foil during the last 10 minutes of baking.
Once done, let the dish stand for a few minutes before serving. This will help it set and make it easier to serve. Enjoy with your favorite side dishes! This dish is also freezer-friendly, making it perfect for busy days.
For best results, consider prepping this dish ahead of time and freezing it for future meals.
If you choose to freeze it, make sure to thaw it in the refrigerator overnight before baking.
Also, feel free to experiment with different cheeses, such as feta or Parmesan, and add any extra ingredients you love, like shallots or red pepper flakes, to enhance the flavor even more.
