Instructions

  • Cooking Instructions:
  • Begin by mincing garlic and heating olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula as it cooks.
  • Once the beef is browned, add the black beans, diced tomatoes with green chiles, chili powder, smoked paprika, cumin, oregano, salt, and pepper to the skillet. Stir well and let the mixture simmer for a few minutes.
  • After the mixture is simmering, add the riced cauliflower to the skillet. Cook for about 5 minutes, stirring occasionally, until the cauliflower is tender. This recipe is ideal for busy weeknights and can be prepared in under 30 minutes.
  • While the cauliflower is cooking, prepare your fresh toppings by dicing the tomato, avocado, and red onion, and roughly chopping the cilantro.
  • Once the cauliflower is tender, remove the skillet from heat and top the beef and cauliflower mixture with shredded cheddar cheese. Cover the skillet briefly to allow the cheese to melt.
  • For a successful cooking experience, be sure to taste and adjust the seasoning as you go, especially with spices like cumin and chili powder.
  • This dish is versatile, so feel free to customize it with your favorite toppings or add extra ingredients based on what you have. Enjoy your delicious and healthy Cauliflower Beef Taco Skillet!
