Cajun Sausage and Rice Skillet Recipe

  • Diced white onion
  • Diced red bell pepper
  • Diced yellow or green bell pepper
  • Diced celery
  • Minced garlic
  • Instant white rice or white jasmine rice
  • Chicken broth
  • Tomato paste
  • Fire-roasted diced tomatoes
  • Cajun seasoning
  • Smoked paprika
  • Dried oregano
  • Cayenne pepper
  • Garlic powder
  • Onion powder
  • Cracked pepper
  • Olive oil

  • In a large skillet, heat a couple of tablespoons of olive oil over medium heat. Add the diced onion, bell peppers, celery, and minced garlic. Sauté for about 5 minutes until the vegetables are soft and fragrant.
  • Add the sausage of your choice to the skillet. Cook for an additional 5-7 minutes, stirring occasionally, until the sausage is browned and heated through.
  • Stir in the instant rice, chicken broth, tomato paste, fire-roasted diced tomatoes, and all the spices (Cajun seasoning, smoked paprika, dried oregano, cayenne pepper, garlic powder, onion powder, and cracked pepper). Mix well to combine all ingredients.
  • Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for about 18 minutes, or until the rice is cooked and has absorbed most of the liquid.
  • Once cooked, remove the skillet from heat and let it sit for a few minutes before serving. Fluff the rice with a fork and serve hot.
  • Extra Tips
  • For an extra layer of flavor, consider deglazing the skillet with a splash of white wine after sautéing the sausage and vegetables, scraping up any flavorful bits stuck to the bottom.
  • If you prefer a crispy bottom layer of rice, you can bake the skillet in a preheated oven at 375°F for 10-15 minutes after simmering. Finally, feel free to adjust the spice levels to your liking, adding more or less cayenne pepper depending on your heat preference.
