Cooking Instructions
In a large skillet, heat a couple of tablespoons of olive oil over medium heat. Add the diced onion, bell peppers, celery, and minced garlic. Sauté for about 5 minutes until the vegetables are soft and fragrant.
Add the sausage of your choice to the skillet. Cook for an additional 5-7 minutes, stirring occasionally, until the sausage is browned and heated through.
Stir in the instant rice, chicken broth, tomato paste, fire-roasted diced tomatoes, and all the spices (Cajun seasoning, smoked paprika, dried oregano, cayenne pepper, garlic powder, onion powder, and cracked pepper). Mix well to combine all ingredients.
Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for about 18 minutes, or until the rice is cooked and has absorbed most of the liquid.
Once cooked, remove the skillet from heat and let it sit for a few minutes before serving. Fluff the rice with a fork and serve hot.
Extra Tips
For an extra layer of flavor, consider deglazing the skillet with a splash of white wine after sautéing the sausage and vegetables, scraping up any flavorful bits stuck to the bottom.
If you prefer a crispy bottom layer of rice, you can bake the skillet in a preheated oven at 375°F for 10-15 minutes after simmering. Finally, feel free to adjust the spice levels to your liking, adding more or less cayenne pepper depending on your heat preference.
