  • Preheat your oven to 400°F (200°C). Grease a 9x13-inch baking dish with olive oil or cooking spray.
  • In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until softened.
  • Add the ground turkey to the skillet and cook for 5-6 minutes, stirring occasionally until browned. Drain any excess fat from the skillet.
  • Stir in the minced garlic, diced bell pepper, cubed sweet potatoes, paprika, cumin, salt, and pepper. Cook for an additional 3-5 minutes until the vegetables are slightly tender.
  • Transfer the turkey and vegetable mixture into the prepared baking dish, spreading it evenly. Cover the dish with foil and bake in the preheated oven for 25 minutes.
  • After baking, remove the foil and sprinkle shredded cheese over the top if desired. Bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley or cilantro before serving.
  • For the best results, ensure that you don't overcook the sweet potatoes during the initial baking phase; they should be tender but not mushy.
