Cooking Instructions
Preheat your oven to 400°F (200°C). Grease a 9x13-inch baking dish with olive oil or cooking spray.
In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until softened.
Add the ground turkey to the skillet and cook for 5-6 minutes, stirring occasionally until browned. Drain any excess fat from the skillet.
Stir in the minced garlic, diced bell pepper, cubed sweet potatoes, paprika, cumin, salt, and pepper. Cook for an additional 3-5 minutes until the vegetables are slightly tender.
Transfer the turkey and vegetable mixture into the prepared baking dish, spreading it evenly. Cover the dish with foil and bake in the preheated oven for 25 minutes.
After baking, remove the foil and sprinkle shredded cheese over the top if desired. Bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley or cilantro before serving.
For the best results, ensure that you don't overcook the sweet potatoes during the initial baking phase; they should be tender but not mushy.
