  • Preparation: Trim excess fat from the beef, cut it into thin strips, and season with salt and pepper. Clean and slice the mushrooms, chop the onion, and mince the garlic. Measure out the beef broth, Worcestershire sauce, Dijon mustard, paprika, and ensure the sour cream is at room temperature.
  • Cook the Pasta: Fill a large pot with water, add a pinch of salt, and bring it to a boil. Cook the egg noodles in boiling water until al dente (7-9 minutes). Drain the noodles, optionally drizzle with olive oil to prevent sticking, and keep warm.
  • Sear the Beef: Heat olive oil in a large skillet over medium-high heat. Add the seasoned beef strips in a single layer and sear for 2-3 minutes on each side until browned. Remove the beef with a slotted spoon and set aside, leaving the skillet for the vegetables.
  • Sauté the Vegetables: In the same skillet, add butter and melt it. Add the sliced mushrooms and cook for 5-7 minutes until browned. Then, add the chopped onion and sauté for an additional 3-4 minutes until translucent. Finally, stir in the minced garlic and cook for 30 seconds until fragrant.
  • Create the Sauce: Pour the beef broth into the skillet, scraping the bottom to deglaze. Stir in the Worcestershire sauce, Dijon mustard, and paprika; bring to a simmer. Return the seared beef and its juices to the skillet and simmer for 5-7 minutes until tender. Reduce heat and stir in the room temperature sour cream until fully combined. Adjust seasoning with salt and pepper as needed.
  • Serve: Remove the skillet from heat and ensure everything is well mixed. Serve the beef stroganoff over the cooked egg noodles and garnish with chopped fresh parsley.
  • When preparing beef stroganoff, be mindful of not overcooking the beef during the initial searing, as it will continue to cook while simmering in the sauce. Additionally, using room temperature sour cream helps achieve a smoother texture in the sauce.
  • Feel free to experiment with side dishes; steamed vegetables, garden salads, or crusty bread make excellent companions to this hearty meal.
